I have a really good recipe for posole! It's gluten free, lactose free, no sugar added, and low fat. Cook up a pound of lean ground meat and a cup of diced onions , drain off fat, add a can of undrained diced tomatoes (14 oz, I think - I like the spicy red pepper tomatoes), a tablespoon of Mexican spice, 1/4 cup beef stock, and one can of drained hominy. Let simmer for about 5 minutes and serve.
You could probably add some diced okra to it if you like. Enjoy! xo
